Dishes that I create can range from explosive flavor or just unpredictable texture from unexpected combinations of ingredients. The interesting thing is that the steps to creating an entirely new dish are the same in a full scale engineering innovation. For engineering, you have a defined problem to solve. To create a dish, you think of a flavor idea or a strange combination of ingredients with a specific mood to match. Barbecue for large groups of friends bantering over a sizzle, delicately crafted pastries of love to someone special, or the familiar taste of your mother’s dumplings as a pleasant indicator that you’re home. Then you start assembling the dish. Eventually you “prototype” it. And like any other product out there, you refine the flavor and plating, until you are confident to take it to your friends and families. Food is the “coagulant” of life. It is the shared commonality that talks in every language, speaks without words, and naturally bonds people through sharing it.
